*45  THIS FACILITY DOES NOT HAVE ENOUGH FOOD SERVICE SANITATION MANAGERS TO COVER ALL SHIFTS. MANDELYN MINTON IS STILL THE ONLY EMPLOYEE WITH A FOOD SERVICE SANITATION MANAGER'S CERTIFICATE. THIS FACILITY HAS DOCUMENTATION THAT ITS EMPLOYEES HAVE BEEN REGISTERED FOR A FOOD SAFETY MANAGER'S COURSE. ENSURE THAT THERE IS A CERTIFIED FOOD SAFETY MANAGER ONSITE AT ALL TIMES WHEN FOOD IS BEING PREPARED [750.540]. NEXT INSPECTION
OBSERVED SODA LINES TO BE ON THE FLOOR. ENSURE THAT CONTAINERS HOLDING FOOD ITEMS ARE STORED AT LEAST SIX INCHES ABOVE THE FLOOR [750.830]. IMMEDIATE/ONSITE
15  OBSERVED THE CABINET INTERIOR BELOW THE SODA MACHINE TO BE IN POOR REPAIR--THE INTERIOR IN UNCLEAN, WARPPED, AND DILAPIDATED. IN ADDITION, I OBSERVED THE CABINET DRAWERS LOCATED NEXT TO THE HAND SINK NEAR THE 3-COMPARTMENT TO NOT CLOSE PROPERLY. PROVIDE FOR ALL SURFACES TO BE MAINTAINED IN GOOD REPAIR, AND ENSURE THAT ALL NON-FOOD CONTACT SURFACES ARE SMOOTH, EASILY CLEANABLE, NON-ABSORBANT, CORROSIVE RESISTANT, AND LIGHT COLORED [750.600/690]. NEXT INSPECTION
23  OBSERVED THE FOLLOWING NON-FOOD CONTACT SURFACES TO BE UNCLEAN: (1) CABINET BELOW THE SODA MACHINE, (2) TABLE SURFACE BELOW THE FLAT SURFACE GRILLS, AND (3) THE INTERIOR OF THE NON-OPERATIONAL COOL. CLEAN ALL SURFACES AND MAINTAIN [750.800]. NEXT INSPECTION
36  OBSERVED THE FOLLOWING FLOOR AREAS TO BE UNCLEAN: (1) UNDER THE ASSEMBLY-LINE STATION TO BE UNCLEAN, (2) FLOOR UNDER THE FRYERS, (3) AREA BELOW THE STORAGE RACKS NEAR THE ASSEMBLY LINE, (4) UNDER THE ICE MACHINE, AND (5) THE FLOOR AREA WITHIN THE STORAGE CLOSET LOCATED NEAR THE RESTROOMS. PROVIDE FOR ALL FLOORING AREAS TO BE IN A CLEAN CONDITION [750.1220]. NEXT INSPECTION
